Crockpot Taco Soup Recipe

Add a dollop of sour cream, squeeze of lime, sprinkle tortilla chips or shredded cheese for added flavor!
  • 1 pound ground beef
  • 1 onion, chopped
  • 1 (16 ounce) can chili beans, with liquid
  • 1 (15 ounce) can kidney beans with liquid
  • 1 (15 ounce) can whole kernel corn, with liquid
  • 1 (8 ounce) can tomato sauce
  • 2 cups water
  • 2 (14.5 ounce) cans peeled and diced tomatoes
  • 1 (4 ounce) can diced green chile peppers
  • 1 (1.25 ounce) package taco seasoning mix
  • 1/2 cup mexican cheese, shredded (optional)
  • 1 cup tortilla chips, (optional)
  1. Brown ground beef in a medium skillet over medium heat. Drain meat and set aside.
  2. Combine ground beef, chili beans, onion, kidney beans, water, tomato sauce, diced tomatoes, chili peppers and taco seasoning mix in slow cooker. Stir together and cook on LOW for 8 hours.
  3. Sprinkle cheese and tortilla chips , if desired and serve.
