This easy chocolate cake recipe is a perfect option for dessert when you want to free up your oven! The sweet and tangy pomegranate compliments the rich chocolate for a perfect treat!
Recipe Ingredients
- 1 cup flour
- 2 teaspoons baking powder
- 6 tablespoons butter
- 2 ounces semisweet chocolate or 2 ounces chocolate chips
- 1 cup sugar, divided
- 3 tablespoons Dutch-processed cocoa powder, plus
- 1/3 cup Dutch-processed cocoa powder
- 1 tablespoon vanilla extract
- 1/4 teaspoon salt
- 1/3 cup milk
- 1 egg yolk
- 1/3 cup brown sugar
- 1 1/2 cups hot water
- whipped cream or ice cream
- 1 cup pomegranate arils, (optional)
Recipe Instructions
- Coat a (2 ½ – 5 quart) slow cooker with cooking spray.
- Combine flour and baking powder in a medium size bowl.
- Melt butter and chocolate in a double boiler, or microwave.
- Whisk in 2/3 cup of sugar, 3 tablespoons of cocoa, vanilla, salt, milk and egg yolk to the chocolate mixture.
- Slowly fold in the flour mixture to the chocolate mixture until combined.
- Pour mixture into slow cooker.
- In a separate bowl, whisk together remaining ingredients including sugar, cocoa and hot water until sugar is dissolved.
- Pour this sugar mixture over the batter in slow cooker.
- Set slow cooker to HIGH for 1 ¼ to 2 ¼ hours. You will know the cake is done when the edges pull away from the sides of the pot and cake is set.
- Let cake cool for about 20 minutes and top with whipped or ice cream and pomegranate arils.
